Recipe
Ingredients:
- 2 cans white beans, drained and rinsed
- 2 cups vegetable or chicken broth
- ½ cup grated Parmesan cheese
- 1–2 tbsp olive oil
- 2 tsp freshly cracked black pepper
- 2 cloves garlic, minced
- ½ tsp salt, or to taste
- 1 tbsp lemon juice
- Fresh parsley, for garnish
Instructions:
- Heat olive oil in a pot and sauté garlic with plenty of black pepper for about 30 seconds.
- Add the beans and broth. Simmer for 8–10 minutes.
- Lightly mash some of the beans to make the broth thicker and creamier.
- Remove from heat and stir in Parmesan until smooth and creamy.
- Add lemon juice and adjust salt and pepper to taste.
- Garnish with extra Parmesan, black pepper, and fresh parsley. Serve warm. 🥣
